Rhubarb Crunch

My rhubarb is insanely HUGE!  I’ve hacked at harvested that thing four times.  I’ve diced it up and frozen a ton of it. 

I’ve also made Rhubarb Crunch.  Yummmmmm!

It has a crumb topping too, but I wanted the pretty red and green diced up rhubarb showing, not brown oats.  So there.

Recipe anyone?  Come get some of my rhubarb and then make this, now!!  🙂

Rhubarb Crunch

1 cup flour, sifted

3/4 cup uncooked oats

1 cup brown sugar

1/2 cup butter, melted

1 tsp cinnamon

4 cups rhubarb, diced

1 cup sugar

2 TBSP cornstarch

1 cup water

1 tsp vanilla

Mix flour, oats, brown sugar, butter, and cinnamon until crumbly.  Press HALF in a greased 9 inch layer pan.  Cover with the diced rhubarb.  In a small saucepan, combine sugar, water, cornstarch, and vanilla.  Cook this until it turns clear and thickens, stirring constantly.  Pour over the rhubarb and then top with the remaining crumbs.  Bake at 350 degrees for 1 hour.  Cut into squares and serve warm.  With ice cream, of course!!  🙂
