A Cookie and Some Chai

 Do you like Chai?

Well, you need a cookie to go with it!  So, I’m going to share a recipe with you.  These brown sugar spice cookies are little,  dense,  and not too sweet.  And actually, if you happen to have  a      lovely princess or a handsome prince lurking around your home, they are PERFECT for tea parties!!  🙂

Perfect Tea Cookies

1/3 cup butter, softened

1/3 cup granulated sugar

1/3 cup packed brown sugar

3/4 tsp baking powder

1/2 tsp ground cinnamon

1/2 tsp ground ginger

1/4 tsp ground nutmeg

1 egg

1 tsp vanilla

1  1/4 cups all-purpose flour

1/3 cup whole wheat flour

In a large mixing bowl beat butter on medium to high speed for 30 seconds.  Add sugars, baking powder, and spices.  Beat until combined.  Beat in egg and vanilla.  Beat in flour gradually, as much as you can.  Stir in any remaining flour with a wooden spoon.  This will seem dry and be very stiff.

In a small bowl, comnine 1 TBSP sugar and 1/8 tsp cinnamon.  Shape the dough into one inch balls and place on an ungreased cookie sheet.  Flatten the balls with the tines of a fork in a criss-cross pattern.  Sprinkle a little cinnamon sugar mixture on the top and bake in a 350 oven for 7-9 minutes.  Cool a minute and then transfer to a wire rack to cool.  (Approx 36 cookies)
