Lemon Curd

Doesn’t it sound awful???  I assure you, it doesn’t taste awful, so much as you like lemons!  And I LOVE lemons.  I made some lemon curd today and ate it on toast.  Delic! 

It helps if you have parents who winter in sunny, warm Arizona who can send you freshly picked from the trees lemons and grapefruits.  Aren’t these beautiful?

Lemon Curd

4 oz butter

some grated rind

2/3 cup freshly squeezed lemon juice

2 cups of sugar

4 eggs

Mix all ingredients, except eggs,  in a saucepan and heat.  Add eggs one at a time, beating well after each addition.  Cook until thick.  Cool partially and then pour into various jars.  Store in the refrigerator.  *Will keep for a couple months that way*
